Chef Brian Redzikowski’s recent arrival to Bond St. had done wonders to this hotel chain’s menu. His pedigree (Joel Robuchon in Las Vegas, Nobu in Aspen) hints at the cuisine he creates at Bond St. Elegant fusion of his French and Japanese roots are found in dishes like the Japanese Bouillabaise and molecular gastronomic ‘sushi’ (think king crab encased in vinegar gelee with bacon foam).
